Roasted Pumpist

This is a really simple and fulfilling dinner that i always make when i can't decide what to eat. you can buy these simple ingredients as a backup plan throughout the week and it always will pull through to make a day. 

It's called the "Roasted Pumpist" because there was a time when i ate roasted pumpkin with olive oil, black pepper & salt  as a pleasant meal. i would pump this meal throughout most of the week and it was really easy to make, all i had to do was roast it! Recently my friend who is on an alkaline diet came up with this super meal version that makes it a whole hearty feed,  He used this as a resource almost every day for months. I fell in love with how delicious it was. It is reliable, simple, you could even use this as a meal prep because it is fresh and enjoyable for the next day. lunch or dinner. a super easy dinner for veggie lovers seeking nourishment and sustainability. This meal is hardy and versatile so you won't get bored of it because you could replace it with whatever you like, for e.g. broccoli or sweet potato instead of pumpkin. All you have to do is set it up and it will cook itself. This recipe is completely alkaline, organic & supports vegans who need a-lot of energy because it truly packs a punch!

There is 3 main ingredients that need to roast: Butternut Pumpkin, Capsicum, Onion. The rest of the elements are olive oil, Salt, Fav spices, (garlic, paprika etc) & quinoa. some extra elements are fresh nuts and herbs + avocado to add in the end which i really enjoy!

There's a few methods you can cook this depending on your mood! 

Step 1: Peel pumpkin and dice into little chunks, put them in a Pyrex then add sliced onion around the pumpkin with the capsicum on top to make sure the onions don't burn too fast. put them in a Pyrex and place into oven (180 degrees Celsius). then prepare your quinoa to cook nice and fluffy. Once veggies are roasted & charred you can take it out of the oven, add your favorite spices, pour a generous amount of organic olive oil and put the quinoa on top. ideally you want the veggies a little charred & juicy with a nice bite to it. Now you mix it all together nice and smooth while adding your avocado w/fresh nuts + herbs if you'd like! Voila, enjoy your serious bowl of cereal!((ddd

(i reccomend least at 2/3 or 1 cup of quinoa for this amount of pumpkin) ^^^

Step 2: I like to save a little time in the process by firstly putting my pumpkin into the oven by itself, while already roasting i prepare my quinoa and start cooking, then slice my capsicum & onion to add in the oven. You can even do this in intervals by going pumpkin first into the oven, taking 15mins to come back & add a capsicum, again another 15 mins for the onion since it cooks the fastest then preparing your quinoa while the onions roasts, and the rest is the same!
